If you’re from or have visited New England, then you should know about Whoopie Pies! Unfamiliar? Close your eyes and imagine two pieces of cake goodness sandwiching a wondrous cream filling! I know, I know. How can I have a site dedicated to healthy living and describe a decadent dessert?! Let me tell you about my creation and then you can indulge, too.
The morning started by wanting to make pancakes (I have seriously been on a pancake kick). Thanks to a friend, I followed a suggested recipe:
I also had a craving for chocolate and added 2 TBSP of unsweetened cocoa powder. Hershey’s brand was on hand, but I don’t feel a certain brand matters.
Well, we know taste testing is a must while cooking! Here I was, tasting my “chocolate” pancakes while staring at almond butter. Almost immediately, I added almond butter (smooth texture) and felt like I was eating the heavenly Whoopie Pie described above. The pancakes were approximately the size of a silver dollar (recommended size if making pies). I simply created a “sandwich” and spread almond butter in the middle. My “dessert” turned into part of my grab-n-go breakfast!
Kids will also enjoy this as a breakfast treat! Although, I recommend substituting some semi-sweet chocolate for the cocoa powder in case kids do not enjoy the “bitter” taste of the powder.
