Are you missing bread from your Paleo diet? In the typical American diet, bread appears as a staple in mostly every meal in some shape or form. Bread and butter with pasta, breaded chicken, toast, sandwiches, burgers, and the list could go on. Bread is also an item I wholeheartedly loved, but in the Paleo world this food item is essentially nonexistent. Due to my cravings (and some Facebook talk about bread), I sought after a Paleo bread recipe. Here is what I came across (thanks to Elana’s Pantry http://www.elanaspantry.com/paleo-bread/):
- 1 ½ cups blanched almond flour

- 2 tablespoons coconut flour
- ¼ cup golden flaxmeal
- ¼ teaspoon celtic sea salt
- 1 ½ teaspoons baking soda
- 5 eggs
- ¼ cup coconut oil
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
1. Place almond flour, coconut flour, flax, salt and baking soda in a food processor
2. Pulse ingredients together
3. Pulse in eggs, oil, honey and vinegar
4. Pour batter into a greased 7.5 x 3.5 magic line loaf pan
5. Bake at 350° for 30 minutes
6. Cool and serve
The recipe recommends pulse all ingredients together in a food processor and I’m in agreement. I was feeling lazy and initially mixed all ingredients in a mixing bowl. The combination made the coconut oil slightly lumpy and it was hard to get the pieces to mix. My lazy brain got smart and out came the processor. Once the ingredients were pulsed together as the recipe recommended, then there were no issues. I only tell you this in case you decide to do the same!
The instructions state to leave in oven approximately 30 minutes. I ended up leaving it for an overall of 40 minutes. At 30 minutes, the middle still had a slight batter consistency. I also used the standard 8” x 4” loaf pan since I did not have the suggested size.
Now go enjoy your bread! Almond butter is a great topping! (Doesn’t it go with just about everything?)

Where do you find almond flour and coconut flour? I’m assuming Whole Foods? I usually bake with almond meal from Trader Joe’s, but I know it’s not the same thing!
Actually, I buy it from a regular grocery store! I go to Market Basket and Donelan’s (don’t know where you live). I buy Bob’s Red Mills brand. They are smaller packages, but always there at least. I would think Whole Foods has the same thing.

I’m always surprised at the taste of things at the end based on the ingredients going in! The bread was good and had it as breakfast this morning. You’re not far from me…I’m in MA. Enjoy baking!
